This is a recipe that the children
will love as they not only get to roll up the spring
rolls, they get to dip them in a yummy sauce once they're
done! Mom or Dad will have to help with part of the
process though.
Ingredients:
**For Spring Rolls
4 large Granny Smith apples
1/2 teasppon of lime zest
2 1/2 tablespoons of fresh lime juice
2 tablespoons of brown sugar
1/2 cup butter
1 large egg
6 sheets of phyllo pastry
* *For Vanilla Maple Sauce
2 teaspoons vanilla extract
1 1/2 cups of maple syrup
toasted walnuts for garishing
Directions:
It is not necessary to peel the
apples, but an adult should cut them into very large
chunks. The children can then cut the apple chunks
into very small cubes using a table knife. Children
should always be supervised carefully when using any
sort of knife.
Once the apples are cubed, place
them in a large bowl with the lime zest, fresh limejuice,
and brown sugar and toss until well mixed.
Put into a colander and leave
it to drain for a few minutes while you prepare the
phyllo. The limejuice will prevent the apples from
turning brown.
Lay a sheet of phyllo on a clean
work surface and let the child lightly brush with
melted butter. Place the second sheet over the first
and repeat the process. Lay the third sheet over the
second and brush with butter. Cut the pile across
the width into 3 long strips, which will form the
wrappers. Repeat this process with the last 3 sheets
of phyllo.
You should now have wrappers for
6 “spring rolls”. Spoon the apple mixture
onto the wrappers, dividing it evenly and let the
child begin rolling them up. Make sure they keep the
filling towards the center so that you can pinch the
ends shut.
Beat the egg in a small bowl and
use it to brush the last 1 inch of phyllo to act as
a glue and hold them in place. Do the same with the
open ends of the spring roll before pinching them
shut.
Bake them in a preheated oven
at 350 degrees for 10-12 minutes or until the spring
rolls are golden in color.
While the apple spring rolls are
baking, warm the maple syrup and vanilla in a small
saucepan over low heat.
Once the complete, put a spring
roll on a plate, scatter a few toasted walnuts and
drizzle with the vanilla maple sauce.
(And, hey… some ice cream would
go nicely with this too… I like Maple Walnut)
