Herbed Mashed Potatoes

Here's a simple, yummy contribution kids can make to your next Sunday dinner.

For a creamier potato add two an additional 2 tablespoons of butter.

2 pounds Yukon gold potatoes
salt to taste
1 cup milk or cream (cream is better!)
4 tablespoons unsalted butter
1/4 teaspoon freshly ground black pepper
2 tablespoon finely chopped mixed fresh herbs (parsley, chives, tarragon etc.). Watch out for little fingers during the chopping!

  • In large pot, cook potatoes in enough water to cover approximately 15 minutes or until tender.
  • Place milk in a small saucepan over medium-high heat.
  • Drain the potatoes and give them a quick mash
  • Using a whisk add butter and hot milk.
  • Stir potatoes with a wooden spoon until smooth.
  • Mix in salt, pepper and herbs.
