Tubular Tuna Sandwiches

My daughter made this sandwich with pickles and ultra low-fat mayo.
This recipe is part of our 5-Day School Lunch Menu.

(Recipe is for 4 sandwiches)

Ingredients:

1 can (6 ounces) water-packed, chunk light tuna, chilled, rinsed, drained, and flaked
4 ounces reduced-fat soft-style cream cheese, at room temperature (or ultra low-fat mayo)
1/3 cup finely chopped celery or pickles
8 slices whole-wheat bread

Directions:

  • In a medium-size bowl, stir together the tuna, cream cheese, and celery.
  • Trim crusts from bread. Roll each slice of bread lightly with a rolling pin until flattened.
  • Spread about 2 tablespoons of the tuna mixture on each bread slice. Roll it up for a tubular delight.

Hint: Read your tuna can label to ensure it is water packed and not oil packed.
