Zaatar
A blend of seasonings that is very popular in Middle Eastern cuisine.

Zabaglione
A dessert dish that originated in Italy, which is prepared with egg yolks, sugar, and marsala wine.

Zahtar
Popular throughout Turkey and North Africa, zahtar is a spice blend comprised of sesame seeds mixed with powdered sumac and dried thyme.

Zander
A large fresh-water fish with firm flesh.

Zest
The outermost, coloured, glossy film of the rind of an orange, lemon or lime.

Zucchini
The Italian and American name for courgette.
