Newfie Screech

Coming from Newfoundland I can't resist placing a recipe for Newfoundland Screech and share the story of how it came it be.

Apparently, before the government had its hands in the business of alcohol, Demerara rum was exchanged for salt cod with the West Indies. It's been told that when a U.S. commanding officer had his first taste of this beverage, he let out a blood-curdling howl. Someone knocked at the door and asked "what the cripes was that ungodly screech?" A Newfoundlander replied "da Screech?" "Tis the rum, me son". The story spread and the name soon caught on and was later adopted by the Liquor Board. Jamaican Rum is used today in Screech.

To welcome you to Newfoundland, many pubs offer a "Screech-in". Most often, you will pledge allegiance to the almighty cod, kiss the cod and take a shot of screech. Its become very popular in Newfoundland and has been enjoyed by many CFA's "Come From Away".
