Chocolate Hazelnut Biscotti

Makes 4 dozen

Ingredients:

2 cups unbleached flour
2 tsp baking powder
2 Tbsp cocoa powder
1/3 cup mini-chocolate chips
1/2 cup toasted hazelnuts
1/4 cup butter
1/2 cup sugar
2 eggs
1 Tbsp Frangelico (hazelnut-flavored liqueur)

Directions:

  • Preheat oven to 375 degrees.
  • Prepare a large baking sheet by spraying it with cooking spray
  • Combine flour, baking powder, chocolate chips, hazelnuts butter and sugar
  • Using a small mixing bowl, beat butter until softened.
  • Add sugar and continue beating until you achieve a fluffy consistency.
  • Add eggs and the Frangelico liqueur and beat well.
  • Stir in flour mixture.
  • On waxed paper shape dough into two 12-14 inch logs. Press down on the logs slightly.
  • Transfer log to prepared baking removing from wax paper.
  • Bake for 15-20 minutes or until lightly browned.
  • Allow to cool completely
  • Reduce oven to 300 degrees.
  • Cut each log into 1/2-inch slices.
  • Spread out biscotti pieces on the baking pan. Bake for another 5 minutes
  • Turn each slice over and bake 5-10 minutes longer or until crisp and dry.
  • Cool completely before storing.
