Orange Chocolate Truffle Cake

Servings: 12

Ingredients:

2 oranges
1pkg (approx 2 cups) semi-sweet chocolate chips (can substitute bittersweet chocolate for a richer chocolate flavour)
¾ cup butter
4 eggs
½ cup sugar
1 ¼ cups cocoa powder
1 cup whipping cream
Icing sugar, for decoration

Directions:

  • Preheat oven to 350 F.
  • Zest oranges and set aside.
  • Melt butter and chocolate chips together (microwave or over double boiler).
  • Whisk eggs, sugar and cocoa powder together.
  • Add cream and orange zest and whisk until smooth.
  • Pour melted chocolate mixture in and whisk until well blended and glossy.
  • Pour into springform pan and spread mixture evenly.
  • Bake 30-35 minutes or until slightly set in the centre but still jiggles (sides will be set and slightly risen).
  • Remove to a cooling rack and carefully loosen edges of cake from pan. Cool 8-10 minutes then transfer to serving platter.
  • Dust with icing sugar. Serve warm or cold.

Successes: Tastes just like chocolate-Grand Marnier truffles. Great for those with wheat or gluten allergy as it contains no flour.
