Stuffed Soft Fruit

Preparation Time: 30 minutes
Servings: 30, but can be halved

Ingredients:

15 hard, fresh peaches or other firm, stone fruit
24 almond macaroons or almond cookies, crushed
¼ c simple syrup or sherry
1 c ricotta cheese
1 ½ tsp chopped preserved ginger
lemon juice

Directions:

  • Prepare the stuffing first. Moisten the crushed almond macaroons or
    cookies with a little simple syrup or sherry, then stir into this the
    ricotta cheese. Add the ginger - this serves to pep up the flavour of the
    stuffing.
  • Sprinkle the halved, stoned fruit with some lemon juice. Place the
    fruit in a buttered, oven-proof dish. Use a small spoon to pile the
    filling into them
  • Bake at 350F for 15-20 minutes, until tender and
    lightly browned. Serve warm.
