Thanksgiving Pumpkin Pie

Ingredients:

Pastry for 9" single crust pie
2 cups cooked pumpkin
1 cup whole milk
3 eggs separated
1 cup granulated sugar
1/2 tsp cinamon
1/4 tsp nutmeg
whipped cream to finish

Directions:

  • Preheat over to 350 F
  • Lightly flour your work surface and rolling pin.
  • Roll out your pastry until it is thin enough to line your pie plate leaving a high rim of dough around the edge of the pie plate.
  • In a large mixing bowl, combine the pumpkin with the whole milk. Beat only the egg yolks well and add them to the pumpkin mixture.
  • Combine the sugar and the spices; stir into the pumpkin mixture.
  • In another mixing bowl, beat the egg whites until they form stiff peaks. Gently fold the egg whites into the pumpkin mixture.
  • Carefully pour the pumpkin mixture into the pie shell and bake at 350 F for about 45 minutes or until a knife inserted in the center comes out clean.
  • Serve with whipped cream.
