Grilled Thai Shrimp

Simple and spicy, this shrimp dish can be prepared in advance and grilled just before serving.

Ingredients:

8 Large raw shrimp cleaned, tails removed
skewers, 8-10 inches long

Ingredients for the Marinade

2 tablespoons rice wine vinegar
1-1/2 teaspoons fresh lime juice
1 tablespoon extra virgin olive oil
1 teaspoon fresh parsley minced
1/2 teaspoon sesame oil
10 drops Tabasco sauce
1/4 teaspoon Kosher salt
1 teaspoon chili paste

Directions:

  • Prepare the marinade; pour into a shallow dish wide enough to hold the skewers and set aside.
  • Straighten the shrimp; take soaked skewers, insert into the shrimp lengthwise. Marinate the shrimp for at least 30 minutes.
  • Grilling shrimp takes no time at all. When you're ready to serve, grill or broil the shrimp on the skewers for only 1 to 2 minutes per side until pink.

Presentation:

A sesame dipping sauce would be an excellent addition to this dish.
