Bruschetta with Portobello Mushrooms and Blue Cheese

(Makes approximately 6 servings)

Ingredients:

3 small portobello mushrooms, cut into 1/4 inch thick slices
1/4 cup balsamic vinegar
2 tablespoon olive oil
1 loaf, fresh Italian bread, cut into 15 slices
1 clove garlic, peeled
1/2 cup crumbled blue cheese
salt and freshly ground pepper to taste

Directions:

  • Preheat oven to 400 degrees.
  • In a shallow dish, lightly greased with olive oil, lay out mushrooms
  • Sprinkle with balsamic vinegar and add salt and pepper to taste.
  • Bake for approximately 10 minutes.
  • Place oven on broil and broil bread slices until they are slightly browned, remove from oven.
  • Gently rub each slice of bread with the garlic clove.
  • Place 1 or 2 slices of portobello on each piece of bread.
  • Add a sprinkling of blue cheese and serve.

*NOTE* Portobello mushrooms absorb liquid very quickly and will take on the flavour of the liquid they are cooked or sauteed with. We often sautee them with chicken stock.
