Lamb Chops with Garlic and Tarragon

(4 servings)

Ingredients:

8 3/4 inch lamb loin chops Salt and pepper Marinade
1/4 c Vegetable oil
2 cl Garlic; crushed
1/4 c Dry white wine
2 tb Tomato paste
2 tb Tarragon vinegar
1 ts Dry mustard
4 To 5 springs fresh tarragon

Directions:

  • In medium bowl, combine all ingredients expect the lamb chops.
  • Once well combined, place lamb chops in a shallow baking dish and pour marinade over the lamb.
  • Cover with plastic wrap and refrigerate for at least 4 hours.
  • Drain chops and reserve for basting.
  • Place chops on grill and brush generously with remaining marinade mixture.
  • Grill to desired tenderness.
