Creamy Belgian Hot Chocolate

Ingredients for 4 servings:

4 cups milk
1 vanilla bean, split lengthwise
7 ounces bittersweet chocolate chopped into small pieces

Directions:

  • Mix milk vanilla bean in a saucepan over medium heat.
  • Once you see bubbles around the edge, reduce heat.
  • Add the chocolate, whisking occasionally until the chocolate has melted
  • Remove from heat and discard the vanilla bean.
  • Add a little more milk if the mixture is too thick.
  • Just before drinking, whisk the milk briskly to provide a nice foam.
