Egg Rolls for Entertaining

Ingredients:

2 tablespoons vegetable oil
2 cups shredded raw cabbage
1 large stalk celery, minced
1 cup shredded, cooked pork, poultry or shrimp
2 scallions, minced or 1 tablespoon minced onion
1 1/2 teaspoons salt
1/8 teaspoon pepper
2 1/2 teaspoons sugar
package egg roll wrappers
1 egg, slightly beaten
cooking oil

Directions:

  • Using a wok, heat the 2 tablespoons of oil
  • Add cabbage and celery and stir-fry together for 2 minutes.
  • Combine pork (poultry or shrimp), scallions, salt, pepper, and sugar with stirfry. Toss everything well and remove from heat.
  • Fill wrappers, roll and seal with beaten egg mixture. Place mixture just below center of each eggroll wrapper. Roll up, folding in sides before rolling all the way to the top. Brush top corner with egg yolk mixture, and continue rolling to complete seal.
  • Place a few egg rolls at a time in hot oil and cook until golden brown, turning frequently.
  • Drain on paper towels.

Presentation Tip: Serve with Mustard sauce and/or Sweet-and-sour sauce.
