Portabello Mushrooms with Goats' Cheese and Honey Maple Ham

Ingredients:

1 1/2 oz unsalted butter
3 tbsp olive oil
4 tsp paprika
4 large portobello mushrooms
4 slices honey maple ham (or your favorite ham)
3 tbsp parsley (chopped)

Directions:

  • Preheat oven to 375 F
  • Using a large skillet, melt butter and olive oil together.
  • Add paprika and cook for a few more seconds.
  • Gently stir in mushrooms and cook on both sides for about 1 more minute.
  • On a section of foil wrap, place each mushroom gill side up.
  • Lay a slice of ham on each mushroom and top with goats cheese
  • Sprinkle with parsley
  • Fold foil to make a packet, sealing edges
  • For for about 10 minutes
  • Serve as an appetizer at your next dinner.
