Savoury Mushroom Croustades

Ingredients:

24 slices of fresh white bread or crusty bread
2 tbsp butter, softened
green onions, chopped
mushrroms, fresh, finely chopped
whole-wheat flour
whipping cream
cayenne pepper
lemon juice
parsley
1/3 cup finely snipped fresh chives
Parmasen cheese

Directions:

Croustades

  • Preheat oven to 375 F.
  • Coat the inside of 24 (2-inch) muffin cups generously with the butter.
  • Using a 3-inch plain round cutter, cut out a circle from each bread slice.
  • Using fingertips, press a circle of bread gently but firmly into each muffin cup so that it fits snugly.
  • Bake 8 to 10 minutes until bread is golden brown. Remove from oven and cool.

Mixture: (Reduce heat to 350 F)

  • Melt butter in pot and add chopped onions and mushrooms.
  • Cook just to remove moisture (3-4 minutes) then remove from heat and stir in flour.
  • Stir in cream and bring to boil.
  • Simmer until thickened.
  • Add chives and other seasoning, stir and remove from element.
  • Fill bread shells with mushroom mixture, top with cheese and bake at 350F for 10 minutes.
