Fresh Tomato & Onion Sauce Over Fresh Pasta

Ingredients:

2 1/4lbs plum tomatoes
1 large red onion, chopped
1/2 cup extra virgin olive oil
1 sprig thyme
Salt to taste
Black pepper
4 servings Fresh Herbed pasta (fettuccini is good)

Directions:

  • Core and remove seeds from tomato and cut into cubes.
  • Over moderate heat, cook onion and olive oil until softened.
  • Once a golden colour is achieved, add tomato, thyme, salt and pepper. Toss ingredients.
  • Over high heat, cook vigorously until tomatoes have melted down and mixture is syrupy.
  • Cook pasta according to instructions.
  • Reheat sauce if necessary and spoon sauce over pasta.

Tip: Fresh herbed pasta can be found in most grocery stores. If not, you regular pasta.
