2 1/4lbs plum tomatoes
1 large red onion, chopped
1/2 cup extra virgin olive oil
1 sprig thyme
Salt to taste
Black pepper
4 servings Fresh Herbed pasta (fettuccini is good)
Directions:
Core and remove seeds from tomato and cut into cubes.
Over moderate heat, cook onion and olive oil until softened.
Once a golden colour is achieved, add tomato, thyme, salt
and pepper. Toss ingredients.
Over high heat, cook vigorously until tomatoes have melted
down and mixture is syrupy.
Cook pasta according to instructions.
Reheat sauce if necessary and spoon sauce over pasta.
Tip: Fresh herbed pasta can be found in most grocery
stores. If not, you regular pasta.
