Pine Nut Spinach Salad

(4 servings)

Ingredients

4 small handfuls of baby spinach
2 tbsp olive oil
1/4 cup pine nuts
2 tbsp balsamic vinegar
salt and pepper to taste

Directions:

  • In a large skillet, heat olive oil
  • Toss in pine nuts and stir frequently until golden brown
  • Pour the roasted pine nuts and olive oil over the spinach
  • Add balsamic vinegar and mix
  • Add salt and pepper to taste
