Gazpacho

( 8 Servings)

Ingredients:

3 large tomatoes
1 large green pepper
1 medium onion
1 English cucumber
2 garlic cloves
1 tbsp. parsley
1 tsp salt
pepper to taste
2-3 drops Tabasco sauce
1 tsp. Worcestershire sauce
2 tbsp. olive oil
3 tbsp. red wine vinegar
3 cups tomato juice
1/4-1/2 cup black olives, sliced
3/4 cup croutons

Directions:

  • Finely chop vegetables and crush garlic.
  • Add all seasonings, oil and vinegar
  • Mix in blender until you obtain a coarse consistency
  • Pour into soup tureen and add tomato juice and olives.
  • Refrigerate for 2 hours before serving and add croutons
