Green Pea Soup with Fresh Mint

Ingredients:

Clarified butter
750 grams fresh or frozen peas
1 large onion, chopped finely
1/4 cup of fresh mint leaves, chopped finely
2 pints vegetable or chicken stock
Seasoning

Directions:

  • In a large skillet, melt butter and fry onion until transparent.
  • Add the peas and stock, and bring to the boil. Reduce to medium high and simmer for 20 minutes.
  • Using a slotted spoon, lift out two spoons of the peas and set aside. Using a mixer, puree the maining soup until smooth, then return the whole peas to the soup.
  • Add mint and simmer for an additional 5 minutes.
  • Adjust seasoning, and serve with your favorite bread.
