Pumpkin Ginger Soup

(8-10 Servings)

Ingredients:

3 pounds fresh pumpkin with skin off, seeds removed
4 tablespoons butter
1 cup chopped onion
1 tablespoon diced garlic
1 tablespoon diced fresh ginger
1 ½ quarts chicken
½ cup heavy cream
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

Directions:

  • Cut the pumpkin into small chunks, approximately 1 inch.
  • Melt the butter in a soup pot and sautee onion until softened
  • Add the pumpkin, garlic and ginger .
  • Add the chicken stock.
  • Boil pumpkin until its becomes very soft.
  • Add cream, nutmeg and cinnamon
  • Bring ingredients to boil again.
  • Puree the soup in a blender to provide a smooth texture.
  • Serve in soup bowls.

Presentation Tip: Add a small dap of cream and using a toothpick swirl the cream in the soup.
