Broccoli & Dill Frittata

(Low-Carb Recipe)

(4 servings)

Ingredients:

1/2 cup non-fat cottage cheese
1/2 teaspoon dried dill
2 cups fat-free egg substitute
1 10-oz package of frozen chopped broccoli
1 tsp olive oil
2 tsp margarine
1 onion -- diced

Directions:

  • Saute onions in oil for 5 minutes in large non-stick skillet over medium heat
  • Add broccoli and dill and saute for an additional 5 minutes (I like my broccoli a little softer, so I saute a little longer)
  • Using a large bowl, mix eggs, and cottage cheese and stir in broccoli mixture.
  • Clean skillet, place it over medium-high heat until hot.
  • Add 1 teaspoon of margarine and swirl the skillet to cover completely.
  • Add half of the egg mixture; lift and swirl the skillet so that the eggs are evenly distributed.
  • As eggs set around the edges, lift them to allow uncooked portions to flow underneath.
  • Reduce heat and cover skillet, cooking until top is set.
  • Overturn onto a serving plate and cut into wedges.
  • Repeat the process with the remaining eggmixture and margarine.
