Low Cholesterol Gnocchi

Ingredients:

1 1/2 Cups Cottage Cheese (small curd)
1/4 Cup Egg Beaters
1/2 grated Romano Cheese
2 - 3 Cups flour (you won't use it all but keep it for dusting your hands)
1-2 tsp salt

Directions:

  • Mix all ingredients together (flour goes in a 1/2 cup at a time) in a bowl until slightly dry.
  • Turn out onto floured surface and knead.
  • Try to add the least amount of flour necessary to keep it from sticking.
  • Divide into several balls, roll out each ball with your hands into a tube about the thickness of your thumb.
  • Cut the tube into 1" pieces.
  • Refrigerate on a cornmeal dusted cookie sheet till ready to cook.

Cooking Gnocchi

  • In a medium saucepan bring water to boil
  • Drop in gnocchi and once the gnocchi begin to float to the surface, remove them with a slotted spoon

Tips: Gnocchi can be served with your favorite pasta sauce and sprinkled with parmesan cheese or sauteed and then sprinkled with fresh herbs just before serving.
