1 1/2 Cups Cottage Cheese (small
curd)
1/4 Cup Egg Beaters
1/2 grated Romano Cheese
2 - 3 Cups flour (you won't use it all but keep it for
dusting your hands)
1-2 tsp salt
Directions:
Mix all ingredients together (flour
goes in a 1/2 cup at a time) in a bowl until slightly
dry.
Turn out onto floured surface
and knead.
Try to add the least amount of
flour necessary to keep it from sticking.
Divide into several balls, roll
out each ball with your hands into a tube about the
thickness of your thumb.
Cut the tube into 1" pieces.
Refrigerate on a cornmeal dusted
cookie sheet till ready to cook.
Cooking Gnocchi
In a medium saucepan bring water
to boil
Drop in gnocchi and once the gnocchi
begin to float to the surface, remove them with a
slotted spoon
Tips: Gnocchi can be served with
your favorite pasta sauce and sprinkled with parmesan
cheese or sauteed and then sprinkled with fresh herbs
just before serving.
