Caramelized Root Vegetables

Ingredients

10 oz beets
10 oz turnip
Salt
2 tbsp butter

Directions:

  • Peel and trim the beets and turnips. If they are too large, they can be cut into quarters.
  • Put each of the vegetables in its own pan. Add a pinch of salt to each and water to about half their height.
  • Divide the butter between the pans.
  • Cover and heat to medium-high.
  • Simmer the vegetables until they are tender (approximately 20 minutes)
  • Remove the covers (most of the liquid will have evaporated) and continue to cook the beets and turnips until they are glazed with their own juices.
  • Season if necessary and serve.
