1 tbsp olive oil
4 green onions
6 med ripe tomatoes - skinned, seeded and quartered
salt and black pepper
2 tbsp fresh basil leaves, chopped
1 large cauliflower, cut into florets
fresh basil, to garnish
Directions:
In a large skillet, heat the oil and add the onions
and tomatoes. Cook for 2-3 minutes.
Stir in salt and pepper to taste, add basil and
cook for 1-2 minutes.
In a large saucepan boil water and cook cauliflower
until tender. Drain well.
Place all vegetables on a serving dish and garnish
with fresh basil
