Provençal Vegetables

Ingredients:

4 tbsp olive oil
8 leeks, washed and cut into short lengths
1 green pepper, thinly sliced
1 lbs large black olives, halved and pitted
The rind and juice of 1 lemon
Salt and pepper to taste

Directions

  • In a large skillet, heat the oil
  • Toss in leeks and stir well
  • Reduce the heat and cover, gently cooking for approximately 10 minutes
  • Add pepper, tomatoes, olives, lemon rind and juice and salt and pepper to taste
  • Cover and continue to gently cook for 12-15 minutes
  • Remove lemon peel before serving
