4 tbsp olive oil
8 leeks, washed and cut into short lengths
1 green pepper, thinly sliced
1 lbs large black olives, halved and pitted
The rind and juice of 1 lemon
Salt and pepper to taste
Directions
In a large skillet, heat the oil
Toss in leeks and stir well
Reduce the heat and cover, gently
cooking for approximately 10 minutes
Add pepper, tomatoes, olives,
lemon rind and juice and salt and pepper to taste
Cover and continue to gently cook
for 12-15 minutes
Remove lemon peel before serving
